Sweet Potato Waffles #WaffleWeek2015

We love waffles at our house!  My husband is the waffle maker and just recently I started using the lovely waffle iron we own.  You might remember I made these great chocolate cake waffle cookies not too long ago!  I also used frozen waffles to make this awesome after school treat!  In all cases these waffles were a hit!

I knew when I found these ladies on Facebook that I wanted to join their Waffle Week and have more delicious waffles to try!  See the list below and check them all out!



My inspiration for these side dish waffles were potato pancakes.  My mom used to use left over mashed potatoes, added a bit of green onion and handformed patties and fried them in a skillet.  These were so good!  We eat more sweet potatoes than white potatoes so I wanted to create a way to eat them as a side using the waffle iron.

I like this recipe for a couple of reasons:  1.  you can pick them up with your hands if you want and 2.  there is creamy sweet potato goodness that isn't masked with a lot of spices.  Perfect side dish for our smoked meatloaf or grilled chicken.


Sweet Potato Waffles

Ingredients (12 small waffles)
  • 2 c mashed sweet potatoes
  • 4 T coconut oil
  • 1 egg
  • 1/2 c flour
  • 1/2 t baking powder
  • 1/4 t baking soda
  • 1/2 t salt
  • 1/2 t pepper
  • 1/4 c milk
Instructions
Melt coconut oil. Whisk in milk and egg. Add in sweet potato. Combine well. Whisk together four, baking powder, baking soda, salt, pepper. Combine with sweet potato mixture. Don't over mix.
Heat waffle iron. Spray with Pam. Dollop batter into the center of each part of the waffle iron. Cook according to waffle iron, 3-4 minutes. Remove and place on cooling rack. Serve with prepared horseradish sauce.
