Shaved Brussels Sprouts and Bacon Pizza #SundaySupper

It's National Pizza Month!

I don't know what we did before pizza came into our lives.  It is such a staple of our family, and we rely on its yummy goodness to satisfy our cravings for crust, cheese and sauce.  We are big fans of pizza anywhere we go: St. Louis, Chicago, New York... you name it.

This pizza is a quick one, that doesn't have a sauce, per se.  There is olive oil and garlic if that is a sauce, but technically, I don't think so.  This nice thing about this pizza is that it can be grilled, since most of the pizza is cooked before it's put on the grill (or in the oven, whatever is your preference.)

Shaved Brussels Sprouts and Bacon Pizza

1 whole wheat prepared crust
3 slices of bacon, cut into 2 inch pieces
2 T minced garlic
2 T olive oil
4 large brussels sprouts, shaved
3 thinly sliced slices of red onion
2 c shredded swiss cheese

Preheat grill or oven to 400.  Cook the bacon until almost done. Pour the olive oil onto the crust, and using a pastry brush, bring the oil all the way out to the edges of the pizza, covering the whole crust.  Sprinkle on the garlic.  Spread cheese over the pizza.  Add on bacon, and shaved brussels sprouts, and red onion.  Bake or grill until cheese is melted and bubbly, about 10 minutes.  Watch carefully so crust doesn't burn.

This is a fantastic, simple lunch, or cut into small squares, is a fabulous appetizer.  Enjoy it the way you like it best!

  1. Brussels sprouts are such a favorite for me. And I don't like tomato sauce, so this pizza is perfect!

  2. I've toyed with making something similar. But now I don't have to! I can just make yours.
