Grilled Chicken BBQ Pizza

This is my last post for #SummerGrilling and it has been a fun-filled week.  I hope all of you have entered the contest and I am sending good vibes to each of you!  I am sharing a quick recipe for a delicious pizza that starts with grilled chicken.

A lot of people won't grill chicken because they think it will get dry.  There are secrets for preventing a dried chicken breast and I am going to share them with you.  The first is to soak your chicken in a brine made of salt and water. I like the ratio of 1/4 c of kosher salt to 4 quarts of water.  Let your chicken soak for 30 minutes. While your chicken is in the brine, preheat your grill to medium heat.    Remove the chicken from the brine and place on paper towels. Blot the chicken dry. Salt and pepper both sides of the chicken. Place on the hot grill.  Insert your iGrill Mini bluetooth connected thermometer and watch the temperature.  165 degrees internal temperature is the correct temp for chicken. To keep the chicken moist, pull the chicken at 150.  Let rest, keep the thermometer inserted. When the chicken reaches 165, you can slice up the chicken for the pizza.

The thermometer works through an app on your phone or tablet.  Download it (super fast) and tell it what you are cooking. It gives you a recommended temperature. Grilled Chicken BBQ Pizza

Grilled chicken breast, sliced on top of a crust smeared with your favorite BBQ sauce, topped with red onion and cheese.
prep time: 15 Mcook time: 1 H & 10 Mtotal time: 1 H & 25 M


  • 1 pre-made pizza crust, large
  • 1/2 c chopped red onion
  • 1 c shredded mozzarella
  • 1 chicken breast, grilled and chopped
  • 1/2 c BBQ sauce


How to cook Grilled Chicken BBQ Pizza

  1. On the premade crust, spread the BBQ sauce.
  2. Sprinkle on cheese. 
  3. Sprinkle on red onion.
  4. Add chicken.
  5. Bake at 450 for 10 minutes.
  6. Let rest for 3 minutes.
  7. Slice and serve.
