Key Lime Cupcakes

I have owned a KitchenAid mixer now for nearly 30 years. The same one. It is white. I would love to have one of those cool printed one, or a pink one. #FoodBloggerGoals

One of the requirements is for us to share a recipe. I made these Key Lime Cupcakes that I made over the years. It's not one of my original recipes, but of course, I have tweaked it over and over. I hope you love it. I always make this recipe into cupcakes. I like to dip their tops into the glaze. It makes a perfectly round circle.

Key Lime Cupcakes

A lemony tart cupcake that is refreshing and easy to make.
prep time: 10 Mcook time: 15 Mtotal time: 25 M

ingredients:

For the cupcakes
  • 1 lemon cake mix
  • 1 box lime jello
  • 3/4 c water
  • 1/4 key lime juice
  • 1/3 c vegetable oil
  • 2 eggs
For the glaze
  • 1 c powdered sugar
  • 2 T key lime juice

instructions:

How to cook Key Lime Cupcakes

For the cupcakes
  1. Preheat the oven to 350.
  2. Mix all ingredients for 3 minutes.
  3. Divide the batter among the cupcakes evenly.
  4. Bake for 15 minutes or until inserted toothpick comes out clean.
  5. Cool for 10 minutes.
  6. Remove from cupcake tins.
  7. Cool thoroughly.
For the glaze
  1. Stir key lime juice with powdered sugar until smooth.

  6. I am excited because I am a gadget girl, I love to cook and its a giveaway that I can participate in (I live outside the US) sometimes that excludes me. I also have access to tons of limes here so I see this desert in my near future. Just have to figure out if I can substitute those eggs.     1. Kelly, you can use 1/4 c applesauce per egg in this recipe and you will get similar results. Hope that helps.
