Banana bread pancakes for Easter brunch pancake board

Pancake Boards, like charcuterie boards, are so popular this year, that I wanted to share with you how I made a Pancake Board using my Banana Bread Pancakes. It is so easy and fun to do, and a great way to serve breakfast.



The recipe for the Banana Bread Pancakes can be found below. I used these pancakes as I felt they added a little something special to this Easter Pancake Board.  Here are the ingredients I put on my board in addition to the pancakes:


  • Cereal.  Cereal pancakes are all the rage in restaurants these days.
  • Chocolate chips.  Delicious on hot pancakes.
  • Sliced bananas
  • Whole strawberries
  • Greek vanilla yogurt
  • Sliced butter
  • Whole blueberries
  • Pancake syrup in an easy-to-pour vessel.
  • Whole raspberries
  • Nutella
Think of all the flavor combos you can make!  That is why I also make a smaller pancake so that you can make all kinds of flavor combos without getting stuffed.  To round out the meal, I would make a platter of breakfast meats and a bowl of Rustic Scrambled Eggs.

A quick recipe for banana bread pancakes

ingredients:

  • 1 box banana bread mix
  • 2 eggs
  •  1/3 c vegetable oil
  • 1 c water
  • Crisco

instructions:

How to cook Banana Bread Pancakes

  1. Preheat griddle to high.
  2. Melt a T of Crisco on the griddle.
  3. Using a medium scoop, scoop batter and release it onto the griddle. 
  4. Repeat as often as your griddle will allow. I can make 6 at a time.
  5. When pancakes have bubbled and edges look dry, flip.
  6. Let pancakes rise, and cook until golden brown.
  7. Remove pancakes, butter, and stack.
  8. Repeat until batter is all used.
