Campfire Cooking 1: Dutch Oven Sprite Chicken and Dutch Oven Biscuits

We are new to Dutch Oven cooking over coals, so we are relying on some tried-and-true recipes that we find on the internet for our first go at this type of cooking.  We found this one at Fabulessly Frugal.  If you know me at all, you know I made some modifications!



I will say, what I modified did not have anything to do with the cooking process.  We relied on the blog's expertise on that matter.  What I modified had to do with the ingredients.  I modify to suit our taste buds and perhaps to make it more to our dietary needs.


Dutch Oven Sprite Chicken

Dutch Oven Sprite Chicken

A delicious dish perfect for camping!

Ingredients:

  • 8 oz uncooked bacon
  • 1.5 lbs boneless chicken thighs
  • 2 lbs red potatoes, quartered
  • 1 lb baby carrots, chopped into one inch pieces
  • 1 large onion, peeled and quartered
  • 1 c shredded cheddar cheese
  • salt and pepper
  • 1 c lemon lime soda (not diet)
  • 1/2 c flour

Instructions:

  1. Start your charcoal.
  2. Take 11 coals and make a checkerboard pattern.
  3. Place your dutch oven on the coals.
  4. Cook the bacon, cut in small pieces.  Remove, leave the grease.
  5. Combine flour and seasonings into a gallon ziplock bag.
  6. Add chicken, shake to coat.
  7. Brown chicken in bacon grease.  Remove chicken.
  8. Add the onions, potatoes, carrots, chicken and bacon.  
  9. Pour the soda over everything.
  10. Cover the dutch oven and cover the top with 17 coals.  Cook for 45 minutes.  
  11. Remove lid, add cheese.  
  12. Replace lid and cook for 10 additional minutes.

This is the best biscuit recipe!  It is a bit time consuming but the biscuits were delicious.  The only thing I would do differently is to cut the biscuits into smaller pieces.  They were huge biscuits!

Ingredients:

  • 1/2 c softened butter
  • 2/5 T sugar
  • 1 egg, beaten
  • 3/4 c buttermilk
  • 1/4 c club soda
  • 1 t salt
  • 5 c biscuit mix 
  • 1/4 c melted butter

Instructions:

  1. Start your charcoals.
  2. Grease and heat dutch oven with 8 coals on the the bottom and 17 on top.
  3. Combine all ingredients (except melted butter) and knead until smooth.
  4. Pat the dough flat to 3/4 in thickness.  (I measured my dutch oven bottom and made a circle to match. I did this so I didn't have to cut out biscuits.)
  5. Place biscuits on the bottom of the hot Dutch oven and bake for 12-15 minutes.  Rotate the oven and lid often.  They bake from the top down.
  6. Remove from heat and brush with the melted butter.

  2. Now this sounds really interesting, I have to admit I've not tried cooking with pop before but I've heard of so many recipes which are meant to be wonderful with a bit of coke, so I can imagine sprite works well too!

  15. With camp ovens, they come in two metals - aluminum and iron. Aluminum is lighter weight (7-10lb) and is simpler to keep up since it doesn't rust. cheap mini ovens
