Spiced Pumpkin Hummus #PumpkinWeek

I am so excited to participate in #PumpkinWeek this year and to bring to all of you a bunch of delicious pumpkin recipes, just in time for the fall season. This week I will share with you a delightful Spiced Pumpkin Hummus, a Pumpkin Spice Smoothie, and Bacon Pumpkin Mac and Cheese.  You'll get all these delights plus a whole lot more, so check back this week for all the pumpkin goodness!

Pumpkin hummus with vegetables and crackers


My first recipe for you is Pumpkin Hummus.  I love pumpkin in both sweet and savory dishes, but I wanted to focus on a savory dish this first of the 2020 season.  Adding pumpkin to your favorite hummus recipe is easy and really boosts the vitamin benefit for you.  Serve this goodness with your favorite cut veggies or your favorite snack crackers.  I even spread it on a good piece of seed bread and load up with sprouts, onion, cucumber, and spinach for a fabulous lunch.


For those of us watching our cholesterol ratings, replace the egg yolk on a hardboiled egg with the pumpkin hummus.  Sprinkle with a bit of smoked paprika for a bit of glam!

Pumpkin Hummus

Pumpkin Hummus

A delicious and nutritious treat.
Prep time: 8 MinTotal time: 8 Min

Ingredients:

  • 1/2 cup pumpkin puree
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 1/2 lemon, juiced (about 2 teaspoons)
  • 2 garlic cloves
  • 2 tablespoons tahini
  • 4 tablespoons extra virgin olive oil, divided
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper, more to taste if needed

Instructions:

  1. Blend all ingredients in a food processor until smooth.
  2. To serve, drizzle avocado oil across the top.  
  3. Serve with cut veggies, crackers, or spread on sandwiches for an extra boost of flavor!
