Caesar Egg Salad with Lettuce Wraps

I really like this Caesar Egg Salad because it is good for you keto dieters.  This is a low-carb dish, especially if you use a homemade keto-friendly Caesar dressing, like the one I found here at Low Carb Maven. This dressing is so good, you will want to eat it by the spoonfuls!



You can serve this on bread as a sandwich, but it is extra good on crunchy romaine lettuce leaves. They make the perfect bed for scoops of this delicious egg salad. I add a little salt onto my lettuce, but no one else in my family does that.

Caesar Egg Salad in Lettuce Cups

So good that it will be your go-to egg salad!
prep time: 10 Mcook time: 20 Mtotal time: 30 M

ingredients:

  • 12 hardboiled eggs
  • 6 T caesar dressing
  • 6T mayo
  • 1 c parmesan cheese, shredded
  • cracked black pepper
  • 8 romaine lettuce leaves

instructions:

  1. Chop eggs.
  2. Add dressing and mayo and fold in.
  3. Fold in parmesan.
  4. Add pepper and stir gently.
  5. Fill lettuce cups with 1/3 c of the mixture.
