Keilbasa Foil Wrapped Dinner

We love making foil dinners for our campouts.  There are endless varieties, and you can let each family member customize them if you want.  We pre-make these so they are ready to pop into the campfire when the coals are just right!  Pro tip: cut the veggies in bite-sized pieces so they cook more quickly.  Use pre-cooked meats so all you have to do is get them warmed up.

Keilbasa Foil Wrapped Dinne

A quick and delicious dinner, either for the oven or the campfire!
Prep time: 7 MCook time: 25 MTotal time: 32 M

Ingredients:

  • 1 pkg turkey keilbasa, cut into fourths, then sliced
  • 2 c baby carrots, sliced
  • 2 c small red potatoes, quartered
  • 4 T butter
  • 1 c diced onion
  • 1 c sliced mushrooms
  • 8 sheets aluminum foil, 14" square

Instructions:

  1. Layer two sheets of foil.
  2. Add keilbasa in an even layer.
  3. Add potatoes.
  4. Add carrots.
  5. Add onion.
  6. Add mushrooms.
  7. Top with 1 T of butter.
  8. Repeat three more times.
  9. Bake at 350 for 25 minutes or until potatoes are cooked through.
  10. On a campfire, lay on top of coals.  Cook 10 minutes, then turn.  Cook 10 more minutes, turn.  Cook 5 minutes.  Let the packets rest, then open carefully.
