Keto Friendly Danish with Fresh Peaches

 The peach crop in Illinois has been magnificent this year and we have taken full advantage at our local market, Hermann's, and when we went camping in Illinois.  We bought peaches directly from the orchard. We did have to wait until they fully softened, but this time the wait was so worth it!

We've had peaches a few different ways this year, making Bacon Wrapped Peaches several times, but our favorite is to eat them whole.  We slice them up and always share at least one slice with each other.  It's the small things, folks, that keep us married for 43 years!

This danish is a new recipe for us.  We try to eat as low carb as we possibly can to keep blood sugars in check. This keto-friendly danish base can be used for a variety of dishes, such as strawberry shortcake or blueberry buckle.  The ingredients are easy to find, even the erythritol, which I buy from Amazon.  (I'm an affiliate, so if you click and purchase, I make a small fee!) It's a three-pound bag which I find is economical and lasts me a long while.

Keto Friendly Cheese Danish with Fresh Peachers

A keto friendly cheese danish made with a few slices of fresh peach.

Ingredients:

For the "danish"
  • 1 c hazelnut flour
  • 1/3 c erythritol (or sugar if you aren't keto)
  • 1 t baking powder
  • 1 pinch sea salt
  •  3 eggs, beaten
  • 2 T butter, melted
  • 1 t vanilla
Filling
  • 4 oz cream cheese, softened
  • 2 T erithritol
  • 1 t vanilla
  • 1 large, ripe peach, cut into 16ths

Instructions:

For the "danish"
  1. Preheat oven to 350.
  2. Line your baking sheet with parchment.
  3. Stir together the flour, erythritol, baking powder and salt.  Mix in eggs, vanilla and melted butter until a dough forms.  The dough should be firm and moldable. Add more flour if your dough is too sticky.
  4. Using a large scoop, scoop dough onto parchment.  
  5. Bake for 20 minutes, until the danish is set.
Filling
  1. Make sure the cream cheese is soft.  You can microwave it a bit, 15-30 seconds until it is very soft.  Stir in vanilla and erythritol.  
  2. When danishes are completely cool, swirl on the filling.  
  3. Arrange 2 slices of peach on top of the filling.
  4. Serve.

Notes:

Delicious when completely fresh! After a day, we like to eat these by putting one in a bowl and pouring cream over it. The cream saturates the danish.
