Hot Honey Skillet Corn Recipe – Sweet and Spicy in Minutes

Hot honey skillet corn is the kind of side dish that quietly steals the show. Sweet corn kernels are warmed in a skillet, coated in buttery hot honey, and finished with just enough heat to keep things interesting. It’s simple, bold, and endlessly versatile—perfect for weeknight dinners, fall gatherings, or as a surprising addition to a holiday table.

This sweet and spicy corn recipe comes together quickly using pantry staples, making it an easy upgrade from plain buttered corn. Whether you serve it alongside grilled meats, roasted chicken, or a cozy autumn meal, skillet corn with hot honey adds warmth, balance, and just the right amount of kick.

I used to make it with hot sauce and regular honey, but once I discovered Mike's Hot Honey I switched over to make this recipe even easier and with fewer ingredients to pull from the cupboard. You can substitute the Mike's Hot Honey with 1/4 cup of regular honey and hot sauce to your liking.

Some tips I have learned along the way:
  1. Salted butter seems to bring out the flavor of the butter more than unsalted butter.
  2. You can use frozen corn, but thaw it out, and wring it dry so that the butter won't splatter from the pan.
  3. Cream cheese is my favorite but my husband likes it with goat cheese.
  4. Having a hot skillet before you add the butter gives the dish a nutty flavor.

FAQ Section

What is hot honey?
Hot honey is honey infused with chili peppers, offering sweetness with a gentle to moderate heat. You can buy it or make your own at home.

Can I use frozen or canned corn?
Yes. Frozen corn works beautifully. If using canned corn, drain and pat dry before cooking to prevent excess moisture.

Is hot honey skillet corn spicy?
It’s mildly spicy, but you can easily adjust the heat by using more or less hot honey or choosing a milder variety.

Can this dish be made ahead?
It’s best served warm, but you can reheat it gently in a skillet. Add a touch of butter if needed.

Is this dish good for holidays?
Absolutely. It pairs especially well with fall and winter menus and adds a modern twist to traditional sides.
