Glorious Pizza (Recipe Added)


I am learning how to eat in a more healthy manner and Bob is learning to cook in a more healthy manner!  We go together so well!
Tonight Bob made this awesome pizza.  It was so loaded with veggies that I couldn't eat my entire portion so I get to have it for lunch tomorrow!


 If you cut this pizza into sixths, it is worth five points a slice on Weight Watchers!

Boboli Veggie Pizza
1 c sliced onion
1 c sliced red, green and yellow peppers
1 c sliced mushrooms
1 c canned diced tomatoes
1 c fresh spinach leaves
3/4 c spaghetti sauce
1 c fat free ricotta cheese
1 Boboli thin crust pizza crust

Saute the veggies in bit of  Pam spray until slightly softened.  Coat the pizza crust with sauce, layer on veggies and dab on ricotta cheese.  Bake in 450 oven until cheese and sauce are hot and bubbling.

  1. OMG..that looks wonderful!! Good for you two!!! My pal Bonnie recently lost about 35 lbs through WW. . . but most importantly, just like you, she learned to eat in a healthier way!

    I am a WW Lifer, but I am over the goal I set when I first started attending :) At that time, I had just quit smoking (that would be about 30 years ago) and I had gained about 25 lbs. WW really helped me get a handle on the eating habit that had replaced my smoking habit. I wasn't able to keep my weight at that unrealistic goal (without feeling like I was starving al of the time) I had set for myself, so I gained some back. Later, I reset my ideal weight goal. I still fight weight, but I can say that WW is such a healthy life style. . . and taught me a lot. We watch our fats and sodium, but if I don't exercise...I can still pack it on. The jogging really helped me to lose a bit of weight last summer and fall....plus I just feel so great after I do it.

    Keep up the good work. . . can Bob share that recipe? I start drooling every time I look at that picture!!

  2. Oh! Does this look good. What sort of cheese is on the top? I could eat this for breakfast, lunch and dinner! Bob is a great cook!

  3. I am a veggie loving pizza girl! The more peppers and onions and mushrooms and olives the better! Specially if the peppers and onions have a crunch to them! Hope your New Year is turning out to be a great one!

    Veggie pizza is my favorite. This looks so good!

    When we got to Osage Beach, the other day, we picked up a Hyvee ready to bake pizza. They made it to order, 1/2 my style and 1/2 J's, then we brought it home to bake. As usual I ordered all veggie on my half. J, on the other hand, had pepperoni on his half. He later said he wasn't that crazy about the pepperoni...perhaps next time, I can convince him to try my veggie recipe.:-)

  9. Terri, that pizza looks amazing! I empathize with you on trying for a healthier diet. A few years ago I started the same journey and after reading a ton of research (I still am learning) I feel so much better and have (over the past few years) lost over twenty pounds without doing much more than cutting processed foods and grains from my diet. For treats I use coconut flour and make muffins and crepes and such! I came across some recipes on whole food blogs and tried them. Also, I use coconut oil a lot. If I'm remembering correctly it's one of those oils that is really good for you and has a molecular structure that doesn't allow the body to store it...now THAT is my kind of fat...and...it's delicious! We are also trying to eat more organic vegetables and stay away from GMO's (genetically modified organisms). That is a Pandora's box, but well worth googling. Good luck to you my kind friend. And thank you soo much for the prayers. They are already being felt. I am sending my own to you in return. :)
