Weekly Cookbook Review

This week Bob chose to try a recipe from a second South Beach Diet Quick and Easy Cookbook.  All these recipes can be cooked in thirty minutes or less!  Bob tried a recipe called South Beach Chicken Paella.  This recipe took a little longer than the thirty minutes promised on the front of the cover, but it was well worth the wait.  If you want to see more cookbook reviews, check out these blogs The Single Nester and Blondie's Journal.

The recipe calls for instant brown rice but Bob replaced that with wild rice.  The nutty, chewy rice was a nice touch in the dish.    Another good thing about the recipe is that it is a one pan dish.  Easy clean up is a bonus!

This recipe makes 4 servings, at 360 calories or 9 points plus on Weight Watchers.
