Potato and Onion Breakfast Soup with Egg and Bacon #TasteCreations

Welcome to the 2021 Edition of Taste Creations!  This is our fourth year and I cannot be more pleased with the bloggers that make up this small and wonderful group of bloggers!  This month we are sharing delicious soups with you, and particularly I will be showing you how to make a delicious Breakfast Soup.  



This breakfast soup is made with potatoes and creates a delicious, creamy base for a poached egg and crispy fried bacon!  The soup is delicious on its own, but add a poached (or fried!) egg and it goes over the top!  A beautiful and tasty dish, especially nice for a later, brunch-like meal.

Potato and Onion Breakfast Soup with Egg and Bacon

Creamy potato soup with a poached egg and bacon for that delicious traditional breakfast flavor!

Ingredients

  • 2 lb russet potatoes, cut in chunks
  • 1 medium onion, chopped
  • 1 c whole milk
  • 1 c chicken broth
  • 1 c heavy cream or half and half
  • 2 T butter
  • 1 T minced garlic
  • 4 poached eggs
  • 4 slices bacon, fried and chopped
  • salt and pepper to taste

Instructions

  1. Place the potato and onion in a soup pot.  Add water to cover the vegetables.  Bring to a boil.
  2. Cook for 20 minutes, or until vegetables are fork tender.
  3. Drain, return vegetables to the hot pot.  Let sit for one minute.
  4. Add cream, milk and chicken stock.  Bring to a boil.  Add butter and garlic.  Cook for 5 minutes.
  5. Using an immersion blender, blend the soup until creamy.  Add salt and pepper to taste.
  6. To serve: Add 1 c of soup to a bowl.  Top with chopped bacon and one of the poached eggs.  Garnish with more pepper.  Serve hot.
