Bloody Red-Eyed Velvet Cupcakes #HalloweenTreatsWeek

It's October which means it's time for Spooky Season and this year's #HalloweenTreatsWeek event! #HalloweenTreatsWeek is hosted by Angie from Big Bear's Wife & its a creepy and haunting week-long event is filled with some amazingly wicked Halloween treats, recipes and some frightfully fun giveaways.

For day two of #HalloweenTreatsWeek, I made red velvet cupcakes using a cake mix and lots of add-ins to make them taste fantastic. Then I make a yummy buttercream using Chocoley's White Chocolate in the frosting. I know cream cheese frosting is more traditional, but this buttercream will take your breath away (said with an evil laugh🤣) I also used Adam's Extract's red food coloring (that is one good red!) and Wilton's adorable bloody eyeballs! For the additional sugar, I used Dixie Crystals.

A tip, I started my red velvet cupcakes with a vanilla cake mix. Oh yes, I did!  Read on to see what else makes this a delicious red velvet cupcake!

Bloody Red Velvet Cupcakes with Peppermint Frosting

These cupcakes are perfect for Halloween, Christmas, Valentine's Day and the 4th of July!
prep time: 20 Mcook time: 30 Mtotal time: 50 M

ingredients:

  • 1 box yellow cake mix plus 6 Tablespoons  flour
  • 1/2 c granulated sugar
  • 5 T unsweetened cocoa powder
  • 1/2 c vegetable oil
  • 3  eggs
  • 2 t vanilla extract
  • 1/2 c milk
  • 1 c sour cream
  • 3 T Adam's Extractred food coloring

instructions:

How to cook Bloody Red Velvet Cupcakes with Peppermint Frosting

Cupcakes
  1. Preheat oven to 350 degrees
  2. Place liners in cupcake tins.
  3. In the bowl of your mixer, place the cake mix plus flour, sugar, sifted cocoa. 
  4. Whisk to blend these ingredients together. 
  5. Then add all the remaining ingredients. 
  6. Begin mixing on low speed, increasing to medium speed for 1 minute. Scrape the sides and bottom of the bowl. 
  7. Beat at medium speed for 1 more minute (longer if using a hand mixer.
  8. Scoop into cupcake liners and bake for 15-20 minutes.The cake is done when a toothpick comes out clean or with a just a few crumbs attached. Let cool for 10 minutes then remove cupcakes.
Frosting
  1. In a large bowl beat the butter at medium speed until creamy. 
  2. Beat in the melted white chocolate. 
  3. Add the confectioners' sugar and vanilla and beat at low speed, scraping the sides and bottom of the bowl, until light and fluffy
  4. Add 1/4 t Adam's Extract Peppermint Extract

NOTES:

Ten minutes of the cooking time is the cooling off period.
