Pink and Blue Sandwich Cake Mix Cookies

There is nothing more exciting than a baby shower, welcoming a little one into the world is a joyous occasion that deserves a party, and the bloggers at Foodie Extravaganza are throwing the founder, Lauren, a virtual baby shower!




Back in my day as an expectant mother, baby showers were mostly for the mom and baby, so it was a party full of fun nibbles, games, and socializing. I haven't been to a baby shower in some time now, so I don't know how they are run now.  The last one I went to was for both mom and dad, couples were invited, and it was more like a BBQ or backyard party.




My favorite party game was the one where everyone wrote a piece of sage advice to the mom on little cards or in a small album.  Then the new mom would read the bits to the participants.  The advice ran from beautiful pieces of wisdom to downright hilarious stories.  My least favorite game had to be the one where bits of melted candy bars were wrapped into napkins shaped like diapers and you had to guess what kind of "poo" was in the diaper.  Looking back, I can see that it was kind of funny!

Each blogger was asked to participate by bringing food to the party.  I brought Pink and Blue Sandwich Cake Mix Cookies.  Why pink and blue?  Because Lauren and her family decided to not know the gender of the baby until it was born.  I love that they did that!  This is one of nature's true surprises, and I love that they chose to honor that.


Pink and Blue Sandwich Cake Mix Cookies

Pink and Blue Sandwich Cake Mix Cookies

These cookies use the ease of a cake mix to make up the dough.

Ingredients

  • 1 cake mix, white is preferable
  • 2 egg whites
  • 1/2 cup vegetable oil
  • red food coloring
  • blue food coloring
  • 1 container of funfetti icing

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a cookie sheet with silicone or parchment paper.
  3. Mix the cake mix, egg whites and oil together by hand or by using a paddle on a mixer.
  4. Divide the dough into two equal parts.
  5. Drop 3 drops of red food coloring into one part of the dough. Blend thoroughly.
  6. Drop 2 drops of blue food coloring into one part of the dough and blend thoroughly.
  7. Using a small scoop, drop balls of dough onto the parchment and bake for 10-11 minutes or until cookie is set on top.
  8. Remove from oven and let cool. Repeat until all the dough is used.
  9. You should get 12 pink cookies and 12 blue cookies.
  10. Once the cookies are cool, spread one cookie with 1 teaspoon of icing, adding more if needed to make the cookies separate. Top with the opposite color.
  11. Continue until all the cookies are paired.

Notes:

Use the 18 oz box of cake mix. If you can only find a 15 oz cake mix, add in 1/4 cup of flour.

  1. Showers have become more about both parents these days and I guess that is a good thing since fathers are more involved with baby care than they were in the old days. Your filled cookies look delicious, Terri!
