Onion soup is a peasant dish, often mentioned in literature.  Most recently, Harry Potter was served onion soup with his friends that Kreacher made.  The French adapted the soup to add a French baguette crouton and cheese.  Some believe that is the crowning touch to a bowl of French Onion soup. I believe the soup, made well, can stand alone.

To make this a Keto soup, reduce the number of carbs you use to make it.  I don't add sugar to help caramelize the onions, or flour to thicken the soup.  I chose yellow onions because they have the least amount of carbs per 1/2 cup.

Keto French Onion Soup
(serves 4)

1 stick of butter
2 yellow onions, sliced
1 bay leaf
1 sprig of thyme
1 clove of garlic, minced
3 cans of beef consomme
1/4 c shredded mozzarella cheese

Melt the butter in a large dutch oven. Add in onions, the bay leaf, the thyme, and the garlic.  Cook together until onions are caramelized.  Remove the bay leaf and the thyme.  Add in beef consomme and bring to a boil, reduce heat immediately and simmer 15 minutes.  Add a can of water if you wish to make it more soup-like.  Top with shredded mozzarella cheese.

To keep it Keto, I leave out the oversized crouton, and I don't miss it.
