Pumpkin Biscuits

When it is time to plan my holiday side dishes, I try to determine what classics I will keep (there are some that if I left out, would cause a mutiny!) and what new side dishes I will try. It is fun to see what my fellow bloggers will share during this week of side dishes.  Please note: we are posting on Monday, Wednesday and Friday so be sure to stop by on those days this week.


My family holiday dinners can be crowds of people or just my family of 4. I look for all kinds of sides that can be made in large batches or in a small casserole.  Diversity is the key!  I made these Pumpkin Biscuits a few years ago and when I was making them again, realized I hadn't share the recipe with all of you.  Better late than never!


Some of the classics that must show up on the table are Homemade Noodles, Cottage Mashed Potatoes, and Savory Bread Pudding. Some of the dishes that have appeared on our table are Gnocchi with Pumpkin Sauce, Brussels Sprouts Au Gratin and Brandied Cranberries.

I decided to share with you a side dish that doesn't have to wait for a fancy meal, but are still perfect for the upcoming holidays. Check out this recipe!

Pumpkin BIscuits

Pumpkin Biscuits

These pumpkin biscuits start with my favorite cornbread. They are sure to be a crowd pleaser.
prep time: cook time: total time:

ingredients:

  • 2 boxes Jiffy cornbread mix
  • 2 eggs
  • 2/3 c milk
  • 1/2 c canned solid packed pumpkin

instructions:

How to cook Pumpkin BIscuits

  1. Preheat oven to 400.
  2. Line cupcake tin with cupcake papers.
  3. Mix all ingredients.
  4. Let sit for 5 minutes.
  5. Scoop mixture into cupcake peppers to 2/3 full.
  6. Bake 15 minutes or until a toothpick inserted comes out clean.
  7. Remove from oven, let rest 5 minutes.
  8. Serve.

  15. Talk about celebrating the season as much as we can. I am loving all the pumpkin and apple recipes and this one's a must try! I like that you can easily adjust the serving size of the recipe, since it's usually just my husband and I. But making a huge batch also means we can share it with friends!
