Fresh Peach Waffles with Cinnamon Syrup

There are fresh peaches available everywhere around the Midwest, so I took advantage of this fresh and in-season produce to make these delicious waffles. I use a homemade batter that has common ingredients. I buy my peach butter from the produce stand where I buy my peaches, but you can also find it in the jelly aisle of large grocery stores.




What substitutions can I make:





You can substitute almond milk (or any other non-dairy milk) for the regular milk in this recipe.  You can use almond flour for the wheat flour, but I notice they are much drier and not as appealing.  If you don't have fresh peaches, just use the peach butter in the recipe. I have already accounted for the added sugar by reducing the sugar from two tablespoons to one.

Peach Waffles with Cinnamon Syrup

Peach Waffles with Cinnamon Syrup

Use peaches in or out of the batter for these delicious waffles

Ingredients

  • 1 cup flour
  • 1 Tablespoon sugar
  • 1/4 cup peach butter or fresh chopped peaches
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 c milk
  • 2 eggs
  • 4 tablespoons butter, melted
  • 1/2 cup white corn syrup
  • 1 teaspoon cinnamon

Instructions

  1. Preheat waffle iron according to the manufacturer's directions.
  2. In a large bowl gently whisk flour, sugar, baking powder and salt then set aside.
  3. In a smaller bowl, whisk milk, peach butter and eggs, and pour into flour mixture and whisk gently to combine.  Whisk in melted butter.
  4. Stir cinnamon into corn syrup and set aside.
  5. Use about 1/2 cup of batter and cook the waffles until deep brown and crisp.  Cook for about 3 minutes. Repeat until batter is all used.
  6. Serve warm, with butter, a dollop of peach butter and cinnamon syrup.

Notes:

Pour the waffle batter into the center of the waffle maker and then use the cup to spread the batter to the edges.

Cinnamon syrup is delicious here but so is maple syrup.

  6. The waffles sound good, but adding that cinnamon syrup on them just puts them over the top delicious! And since you reduced the sugar in the waffles themselves I can enjoy just a wee bit more syrupy goodness.
