Fall Comfort



Bob called me on the way home from work saying he really would like to do chili for dinner tonight. He said he'd stop at the store on the way home from work to pick up some chili ground beef from our favorite butcher.



While he was gone, I made some cornbread to go along with our chili. I love this little mix, Jiffy. It makes just enough for the two of us. The cornbread is a little sweet, which I like, too.

Our chili is very simple:

Brown 1 pound of chili-ground beef. Salt and pepper beef during the cooking. Dice 1 medium onion and add the beef, saute until onion is transparent. Add 1 can of chili beans and 1 can of chili ready diced tomatoes. Heat through.

We like to top our chili with shredded cheddar and chopped green onions. Yummy!

    Sounds great and the Jiffy mix is good. I like the sweet in it also. If you have a sandwich maker put the jiffy mix in with a weinner cut in half. It makes the best home made corndogs.

  2. My husband loves sweet cornbread so Jiffy works for me. It's so easy and good. I like it too, but my favorite is homemade, no sweet cornbread. My Mom makes the best.

  7. We eat chili here all of the time. Kenny and the boys love it. I've never used Jiffy. I tend to make mine from scratch because I'm dumb. Seriously never thought about buying a mix...

    Sometimes I put beans in our chili and sometimes not. It depends on my mood. I'm finicky like that!

  9. I've never had cornbread in my life...I know I'm sooo deprived! lol Cornbread is not something we hear about often around here. I so love chili...hope you kept me a bowl, I'll be right over! hehe xox

  10. I made chili, at the lake, over the weekend. T'was wonderful. You're right, it's perfect fall comfort food! Cheddar cheese and chopped onion are toppers for ours, too.

    I use those jiffy mixes, too. They're wonderful, for two.

  11. My mother loved the Jiffy mix and so of course, I use it too! I always double my chili recipe so that I can freeze half for another meal. We love sour cream and cheddar cheese in ours, mainly because I always seem to trip with the chili powder can and it is VERY WARM!

  13. Oh gosh! You've made me hungry for chili and it isn't even 5 AM yet. This is exactly the way we eat our chili down to the green onions. Our son and DIL always make Jiffy cornbread to go with it when we have it with them. I so wish I could eat gluten. I miss cornbread something awful. xoxo

  14. Chili is one of my favorite foods! And I make the Jiffy cornbread mix too!! Of course I have to make three boxes at once for our big family! But we love it!
