There are some cookies that come and go with the seasons, but peanut butter cookies seem to have a permanent place in the cookie jar.
Today is Peanut Butter Cookie Day, and in our house, that is definitely worth celebrating because peanut butter cookies happen to be Bob's favorite. If there is a plate of cookies on the counter, he will politely sample a chocolate chip cookie or an oatmeal raisin cookie, but his eyes always light up when he sees those familiar peanut butter cookies with the crisscross fork marks on top. We have come upon this recipe using browned butter than that we love and you should try it too!
Of course, I have my own little twist.
While Bob prefers the classic version, I love adding mini chocolate chips to mine. There is something about the combination of creamy peanut butter and tiny bits of chocolate that feels absolutely irresistible. The chocolate doesn't overpower the peanut butter flavor. Instead, it sneaks into every bite and makes a good cookie even better.
I think part of what I love most about peanut butter cookies is how comforting they are. They remind me of home kitchens, handwritten recipe cards, and afternoons when the simple pleasure of a warm cookie and a glass of milk could make everything seem right with the world. They are not fancy. They are not trendy. They are simply dependable and delicious.
Maybe that is why they have remained popular for generations.
So today I am celebrating Peanut Butter Cookie Day by baking a batch for Bob and perhaps adding a few extra mini chocolate chips to mine. We will likely enjoy them with a cup of coffee, share a few stories, and appreciate one of life's simple pleasures.
